Salad Recipes with Gianni’s Chicken Burgers

 

The Simple Salad with Gianni’s Chicken Burger 

Ingredients

  • 1 grilled chicken burger with grilled vegetables
  • 3 cups romaine lettuce 

For Lemon Dressing 

  • ¼ cup extra virgin olive oil
  • ¼ cup freshly squeezed lemon
  • A pinch of salt and a pinch of black pepper 

Directions

  1. Preheat the grill for high heat
  2. Lightly oil the grill grate. Grill chicken vegetable burger for 6 minutes on each side. Remove from heat, cool, and slice.
  3. Arrange romaine lettuce on serving plate. top with chicken mushroom burger slices and lemon dressing

Italian Gianni’s Chicken Burger Salad

Ingredients

  • 3 cups Mesculin Salad
  • 1 Gianni’s chicken burger with shitake mushrooms or 1 Gianni’s chicken burger with spinach
  • 1/4 cup cherry tomatoes, halved
  • ¼ cup sliced Vidalia onions

Directions

  1. Preheat the grill for high heat.
  2. Lightly oil the grill grate. Grill chicken burger for 6 minutes on each side. Remove from heat, cool, and slice.
  3. Arrange mesculin salad on serving plate. Top with chicken burger slices, cherry tomatoes and sliced Vidalia onions, balsamic vinegar and extra virgin olive oil.

The Asian Salad with Gianni’s Chicken Burger

Ingredients

  • 1 Gianni’s chicken burger with shitake mushrooms
  • 1-1/4 green onions, chopped
  • 1/8 teaspoon salt
  • 
1/8 teaspoon pepper
  • 
1 tablespoon and 1 teaspoon sugar
  • 2 tablespoons rice vinegar
  • 2 tablespoons and 2 teaspoons olive oil
  • 1/8 (14 ounce) package wonton wrappers
  • 
oil for frying
  • 1/8 head iceberg lettuce, chilled, and torn into bite-size pieces
  • 1/8 (4 ounce) can sliced water chestnuts, drained
  • 2 teaspoons toasted sesame seeds
  • 1 tablespoon and 1 teaspoon toasted sliced almonds
  • 
1/8 (10 ounce) can mandarin orange segments, drained           

Directions

  1. Preheat the grill for high heat.
  2. Lightly oil the grill grate. Grill chicken shitake mushroom burger for 6 minutes on each side. Remove from heat, cool, and slice.
  3. For the dressing, place green onions, salt, pepper, and sugar in a blender. Pour in olive oil and rice vinegar. Blend until smooth. Remove to a bowl, cover, and refrigerate until ready to serve.
  4. In a large skillet or wok, warm oil over medium-high heat. Cut wonton wrappers into strips. Fry wonton strips until crisp. Remove to paper towels.
  5. In a large bowl, toss together lettuce, water chestnuts, sesame seeds, sliced almonds, and mandarin oranges. Pour dressing over salad, and toss gently. Top with fried wontons and grilled chicken shitake mushroom burger strips

The Summer Gianni’s Chicken Burger Salad

Ingredients

  • 
1 Gianni’s chicken spinach burger
  • 
1 tablespoon and 1 teaspoon pecans
  • 
2-3/4 teaspoons red wine vinegar
  • 
1 tablespoon and 1 teaspoon white sugar
  • 
2 tablespoons and 2 teaspoons vegetable oil
  • 
1/8 onion, minced
  • 
1/8 teaspoon ground mustard
  • 
1/8 teaspoon salt
  • 
1/8 teaspoon ground white pepper
  • 
3/8 head Bibb lettuce - rinsed, dried and torn
  • 
2 tablespoons and 2 teaspoons sliced fresh strawberries

Directions

  1. Preheat the grill for high heat.
  2. Lightly oil the grill grate. Grill chicken spinach burger for 6 minutes on each side. Remove from heat, cool, and slice.
  3. Meanwhile, place pecans in a dry skillet over medium-high heat. Cook pecans until fragrant, stirring frequently, about 8 minutes. Remove from heat, and set aside.
  4. In a blender, combine the red wine vinegar, sugar, vegetable oil, onion, mustard, salt, and pepper. Process until smooth.
  5. Arrange lettuce on serving plates. Top chicken spinach burger slices, strawberries, and pecans. Drizzle with the dressing to serve.

Southwestern Gianni’s Chicken Burger Salad         

Ingredients

  • 1 cup chopped romaine lettuce
  • 1 Gianni’s Chicken Burger with grilled vegetables
  • 1 tablespoon and 1 teaspoon cherry tomatoes, halved
  • 1 tablespoon and 1 teaspoon corn kernels, drained
  • 1 tablespoon and 1 teaspoon, drained and rinsed
  • 1 teaspoon chopped fresh cilantro leaves
  • 2 oz avocado diced
  • 2 ¾ teaspoons tortilla strips, for garnish
For the Cilantro Lime Dressing
  • 2 tablespoons and 2 teaspoons loosely packed cilantro, stems removed
  • 1 tablespoon and 1 teaspoon plain Greek yogurt
  • 1/3 clove garlic
  • 2 teaspoons lime juice
  • Pinch of salt
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar 

Directions

  1. Lightly oil the grill grate. Grill chicken spinach burger for 6 minutes on each side. Remove from heat, cool, and slice.
  2. To make the cilantro lime dressing, combine cilantro, Greek yogurt, garlic, lime juice and salt in the bowl of a food processor. With the motor running, add olive oil and vinegar in a slow stream until emulsified; set aside.
  3. To assemble the salad, place romaine lettuce in a large bowl; top with Gianni’s Chicken Spinach Burger, tomatoes, corn, black beans and cilantro. Pour the dressing on top of the salad and gently toss to combine. Stir in avocado.
  4. Serve immediately, garnished with tortillas trips, if desired.

Italian Style Chicken Burger

Grilled Vegetable Gianni’s Chicken Burger with garlic aioli (see recipe below), topped with melted provolone cheese with lettuce and tomato on a white ciabatta bun.

Garlic Ailoli Recipe (makes 1 cup):

  • ¾ cup mayonnaise
  • 3 cloves garlic, minced
  • 2 ¼ tbspn lemon juice
  • ¾ tspn salt
  • ½ tspn black pepper

Preparation – Mix mayonnaise, garlic, lemon juice salt, and pepper in a bowl, cover and refrigerate for at least 30 minutes before serving

 

Chicken Spinach Burger with Roasted Pepper Aioli

Gianni’s Chicken Spinach Burger topped with melted mozzarella and mesculin lettuce served on a brioche bun with a roasted pepper aioli spread (see recipe below): 

Roasted Pepper Aioli Recipe (makes 1 cup)

  • 3 garlic cloves, peeled
  • 1/2 cup fat-free mayonnaise
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed red pepper
  • 1 (7-ounce) bottle roasted red bell peppers, drained 

Preparation - Drop garlic through food chute with food processor on. Process until finely minced. Add the remaining ingredients, and process until well-combined.

 

Whole Earth Gianni’s Chicken Burger

Hawaiian Gianni’s Chicken Burger

Southern Gianni’s Chicken Burger

Gravy Recipe

  • 
1 tablespoon and 1 teaspoon vegetable oil
  • 
2 tablespoons all-purpose flour
  • 
1/8 teaspoon salt
  • 
1/8 teaspoon ground black pepper
  • 
2/3 cup milk 

Preparation: Heat the oil in a large skillet over medium heat. Whisk in the flour, salt and pepper until smooth. Cook and stir over medium heat until browned, about 10 minutes. Gradually stir in milk so that no lumps form, and continue cooking and stirring until thickened. If the gravy becomes too thick, you may thin it with a little more milk.

Pesto Gianni’s Chicken Burger 

Gianni’s Chicken Burger with Grilled Vegetable with melted fresh mozzarella and a basil pesto aioli spread (see recipe below) on a toasted ciabatta bun.

  • 3/4 cup mayonnaise
  • 1/3 cup finely chopped fresh basil
  • 1 tablespoon fresh lemon juice
  • 1 1/2 teaspoons minced garlic
  • 1 1/2 teaspoons grated lemon peel

Preparation: Mix all ingredients in medium bowl. Season to taste with salt and pepper. Cover and refrigerate at least 1 hour to allow flavors to develop. (Can be prepared 2 days ahead. Keep refrigerated.)
